Watercress and Avocado Salsa

1 bunch Watercress

1 small red onion, finely chopped
1 garlic clove, finely minced
1 tble. Spoon white wine vinegar or Champagne vinegar
Juice of 1 lime
Zest of 1 lime, finely chopped
Salt and freshly ground black pepper, to taste
1 large ripe avocado, diced

Combine all ingredients except the avocado.

Gently fold in avocado, taking care not to mash it up.

Adjust seasonings if necessary, and serve immediately on top of grilled fish, chicken or thinly sliced flank steak.

Also great with tortilla chips.
